This best practice showcases a collaboration between Yummate and Migros to create high-protein, baked green lentil chips made from locally grown green lentils. Migros supports farmers through a contract-farming model by providing traditional seeds and guaranteeing product purchase. Yummate transforms these lentils into value-added, innovative, plant-based snacks.
Impact and Outcomes
The project created both environmental and socio-economic impact by strengthening local production in a country where green lentils are imported from Canada. By shifting to locally grown green lentils through Migros’ contract-farming model, the project reduces long-distance transportation and aims to significantly lower the carbon footprint associated with lentil supply chains.
Key success factors include strong industry–SME collaboration, a guaranteed purchase model that reduces farmer risk, and consumer acceptance of plant-based, value-added snacks. The project also received support from EU EIT Food under Straight to Market program validating its contribution to green innovation, protein diversity, and sustainable food systems.
Transferability & Scalability
This model is highly transferable to other crops, regions, and industries. Any sector involving agricultural inputs can replicate the contract-farming + value-added processing + retail integration model. The approach can be scaled to:
-Other local crops such as chickpeas, lentils, beans, or ancient grains
-Different food categories requiring sustainable raw materials
-SMEs aiming to build green value chains with large retailers
This project demonstrates how cross-sector collaboration can empower female entrepreneurs, strengthen local agriculture, and introduce sustainable, nutritious products to mainstream retail. It provides a replicable blueprint for creating green, inclusive, and economically viable food ecosystems.
